Soda gets even fizzier with this fabulous ferment. This is a fun, homemade kefir concoction flavored with natural cherry juice and vanilla extract.
- In a large glass container fitted with a lid (32 ounces or larger) whisk together vanilla, cherry juice, simple syrup, and milk kefir starter.
- Fill container with filtered water, seal, and sit in a dark corner of your kitchen.
- Check every 2–3 days. Kefir soda will be finished when bubbly (usually no more than 5–6 days).
Tip: Patience young kefir grasshopper—this will take a couple of days to get bubbly and fizzy, but it will be well worth the wait. You can buy kefir starter online or in most health food stores.
