A tasty vegan side dish with root vegetables that are perfectly mashed and seasoned with mega garlicky vegan butter.
Ingredients for root vegetable mash:
Ingredients for vegan garlic butter:
- Bring a large pot of water to a boil and add parsnips, potatoes and turnips. Boil for 15-20 minutes or until all vegetables are fall-apart tender.
- Drain vegetables and carefully spoon into a food processor. Add vegetable broth, salt and pepper and blend until smooth. Transfer to a bowl for serving.
- Combine vegan garlic butter ingredients in a food processor and blend until smooth.
- Serve root vegetable mash warm with vegan butter.
