- Preheat oven to 425 degrees F.
- Cut sweet potatoes in half lengthwise, and then slice each half into several wedges. Line wedges on a large, rimmed baking sheet. Drizzle olive oil and lime juice over potatoes and then sprinkle with garlic, cilantro, salt, and pepper. Use your hands to toss the potatoes until evenly coated in oil and seasonings.
- Bake 20 to 25 minutes, or until fries begin to turn crisp and golden brown.
