Kofta is a traditional Middle Eastern style grilled meatball, this healthier version is made with ground turkey mixed with exotic herbs and spices. The meatballs are served on top of a farro tabbouleh salad loaded with parsley, mint, scallions and tomatoes-super tasty and refreshingly light.
Ingredients for tabbouleh:
Ingredients for turkey kofta:
- In a large bowl toss together tabbouleh ingredients until combined. Keep refrigerated until ready to serve.
- Preheat grill to medium high heat. In a large bowl mix together kofta ingredients until combined.
- Form torpedo shaped meatballs around bamboo skewers and grill for 10 minutes, turning frequently, or until slightly charred and cooked completely. Let rest for 3 minutes.
- Serve kofta on top of tabbouleh salad.
