This BBQ bowl is loaded with grilled tofu, brown rice, pinto beans, corn, cabbage, cucumbers, and tomatoes, and drizzled with a vegan ranch style dressing—a fabulous summer meal bowl.
Ingredients: For the toppings
- In a medium bowl, whisk together milk, mayonnaise, vinegar, garlic, onion, dill, chives, and salt until smooth. Refrigerate until ready to serve.
- Preheat grill to medium-high heat. Skewer tofu, and brush with the BBQ sauce. Grill for 6–7 minutes, flipping once until grill marks form. Remove from the grill, and brush with the remaining BBQ sauce.
- Fill bowls evenly with brown rice, and top with BBQ tofu, pinto beans, corn, cabbage, cucumbers, tomatoes and red onion. Drizzle with salad dressing before serving.
