We’ve deconstructed the Vietnamese summer rolls into these flavorful noodle bowls- chock full of shrimp, vegetables and fresh herbs drizzled with a hoisin peanut dressing.

- In a large bowl whisk together hoisin, peanut butter, vinegar, fish sauce and lime juice until smooth. Keep refrigerated until ready to serve.
- Fill bowls evenly with noodles, shrimp, carrots, cucumbers, peppers, lettuce, mint, basil and cilantro. Drizzle with dressing and sprinkle with crushed peanuts.
Tip: This recipe is perfect for meal planning lunch and keeps well refrigerated over night. Toss the noodles with the dressing to keep them from sticking.
