This vegetarian ‘steak’ recipe is perfect for Meatless Monday. Thick sliced cabbage is seasoned with garlic, pepper, dill and mustard seeds before being roasted and drizzled with a low-fat blue cheese cream.

1. Preheat oven to 400°F.
2. In a small bowl combine salt, garlic, pepper, mustard seeds, dill and crushed red pepper until mixed.
3. Arrange cabbage steaks on a baking sheet and drizzle with oil. Season both sides of the cabbage with seasoning blend and roast for 20 minutes or until cabbage steaks are tender and slightly charred.
4. Combine blue cheese cream ingredients in a food processor and blend until smooth. Drizzle cream over roasted cabbage steaks and garnish with fresh dill before serving.
Tips: Store the blue cheese cream for up to a week, refrigerated, for either easy meal prep or as a dip for veggies.
