Donburi Breakfast Bowl
Donburi is a traditional Japanese comfort dish served in a bowl of fluffy seasoned rice, topped with oodles of ingredients. This version uses miso soup to flavor the rice, smoked salmon and addictively tasty sesame nori crunch.

Instructions:
- Preheat oven to 350°F.
- In a medium size sauce pan bring oil, maple syrup and rice syrup to a simmer. Stir in sesame seeds, soy sauce and nori.
- Spread mixture over a parchment lined cookie sheet and bake for 10 minutes. Let cool for 30 minutes or until hard and break into pieces. Set aside until ready to serve.
- Bring 4 cups of water to a boil over medium high heat and stir in rice, vinegar and miso soup mix. Cook for 20 minutes or until rice is fluffy, slightly sticky and liquid has been completely absorbed. Alternatively, cook rice with additional ingredients in a rice cooker using manufacturer’s instructions.
- Top cooked rice with salmon, radishes, scallions and soft boiled egg. Sprinkle with sesame nori crunch before serving.
Tips: The sesame nori crunch can easily be made ahead and stored in the pantry for a month, if it lasts that long.
For still runny soft boiled egg, boil for 6 minutes and cool in an ice bath immediately. For firmer yolks, boil eggs for 10 minutes.
