Winter acorn squashes, butternut and pumpkin, are tossed with a garlic herb horseradish mixture before being roasted. A delicious hearty, healthy winter side dish.
Ingredients for a horseradish mixture:
- Preheat oven to 400°F.
- In a food processor, combine horseradish mixture ingredients. Blend until smooth and set aside until ready to roast.
- Toss squash with mixture and arrange on parchment lined cookie sheets. Roast for 25-30 minutes or until squash is tender.
- Garnish with thyme and rosemary before serving.
