Pesto Parmesan Sweet Potato Toasts
Sliced sweet potatoes replace the bread in these delicious savory “toasts”. Each one is topped with pesto, sun-dried tomatoes, soft boiled eggs, and grated Parmesan.

Instructions:
- Preheat oven to 400°F.
- Line sliced sweet potatoes on a baking sheet, drizzle with olive oil and season with salt and pepper. Bake for 15 minutes or until sweet potatoes are cooked and slightly al dente.
- Top sweet potatoes with pesto, parmesan, tomatoes and eggs before serving. Garnish with fresh basil leaves.
