Farro is a hearty ancient whole grain with a wonderful nutty flavor. This recipe replaces bread with the fiber-rich grain for a healthier stuffing alternative.
1. Heat oil in a large skillet over medium high heat. Sauté onions and celery for 2-3 minutes or until tender and translucent.
2. Stir in mushrooms, deglaze with wine and stir in broth, salt, pepper, sage, nutmeg, thyme, rosemary and farro. Cook for 5-6 minutes and serve.
