- Heat oil in large skillet over medium-high heat. Brown tofu on all sides and let drain on a paper towel.
- Arrange tofu, green beans, carrots, cucumbers, eggs, sprouts, radishes, and cabbage on a large platter or bowl.
- In a medium bowl, whisk together peanut butter, coconut milk, lime juice, agave and soy sauce together until smooth. Drizzle dressing over salad.
- Garnish salad with cilantro, scallions, jalapeños and chopped peanuts before serving.
Tip: You can make the salad dressing ahead of time, it keeps for 2 weeks in the refrigerator.
