Gado Gado (Indonesian Vegetable Salad with Peanut Dressing)

Gado Gado is a unique, easy to assemble, and popular street food dish from Indonesia. This is a quick and tasty meal, perfect for lunch menu planning.

Serves 4

Ingredients: For the tofu

Ingredients: For the dressing

Ingredients: For garnish

Instructions:

  1. Heat oil in large skillet over medium-high heat. Brown tofu on all sides and let drain on a paper towel.
  2. Arrange tofu, green beans, carrots, cucumbers, eggs, sprouts, radishes, and cabbage on a large platter or bowl.

  3. In a medium bowl, whisk together peanut butter, coconut milk, lime juice, agave and soy sauce together until smooth. Drizzle dressing over salad.
  4. Garnish salad with cilantro, scallions, jalapeños and chopped peanuts before serving.

Tip: You can make the salad dressing ahead of time, it keeps for 2 weeks in the refrigerator.
