Whole Grain Irish Soda Bread
A whole grain twist on the classic Irish Soda Bread that’s absolutely delicious!
Makes 1 loaf
Ingredients
Instructions:
- Combine flour, sugar, salt and baking soda in an electric mixer fitted with the hook attachment.
- Add in butter, one cube at a time, and mix until crumbly. Add in currants, egg and buttermilk forming a rough, crumbly dough.
- Knead dough on a lightly floured work surface for 3-4 minutes (dough will still be a little crumbly). Place dough in a lightly oiled cake pan or cast iron skillet, cover with plastic wrap, and let rest for 1 hour.
- Preheat oven to 425°F. Uncover bread and score the top with an ‘x’. Bake for 35-45 minutes or until bread is golden brown. Check for doneness by inserting a toothpick or skewer into the center. If it comes out clean, the bread is done. Let rest for 15 minutes before slicing and serving.
