Flourless Chocolate Cherry Stout Clafoutis
Clafoutis is a French dessert that is part cake, part custard (pronounced klafuti). This recipe uses a grain-free flour alternative as well as dark chocolate, gluten-free stout beer, and fresh cherries. Serve spooned or serve sliced-it is delicious either way.

- Preheat oven to 350°F.
- In an electric mixer fitted with whisk attachment combine almond flour, cocoa, sugar, salt and baking powder until mixed. Add in eggs, butter and beer and mix until smooth.
- Grease a glass pie pan or casserole dish with reserved butter and sprinkle with reserved flour. Place cherries on the bottom and top with batter.
- Bake for 35-40 minutes or until clafoutis is puffed and slightly firm.
- Serve with whipped topping, cherries, mint and a light sprinkling of powdered sugar.
