Roasted Cabbage Steaks with Blue Cheese Cream
This vegetarian ‘steak’ recipe is perfect for Meatless Monday. Thick-sliced cabbage is seasoned with garlic, pepper, dill and mustard seeds before being roasted and drizzled with a low-fat blue cheese cream.

Instructions:
1. Preheat oven to 400°F.
2. In a small bowl combine salt, garlic, pepper, mustard seeds, dill and crushed red pepper until mixed.
3. Arrange cabbage steaks on a baking sheet and drizzle with oil. Season both sides of the cabbage with seasoning blend and roast for 20 minutes or until cabbage steaks are tender and slightly charred.
4. Combine blue cheese cream ingredients in a food processor and blend until smooth. Drizzle cream over roasted cabbage steaks and garnish with fresh dill before serving.
Tips: The blue cheese cream can be stored in the refrigerator for up to a week. Make ahead for easy meal prep or use it as a dip for veggies.
