Peri-Peri Chicken Shawarma

This spicy and savory grilled chicken dish is easy to prepare and ready in under 30 minutes. Here is a recipe for a healthy, flavorful version of the classic chicken schwarma-packed with veggies, yogurt and all wrapped up in a warm toasty pita.

Instructions:

  1. In a large bowl whisk together olive oil, lemon juice, paprika, oregano, garlic powder, onion powder, peri peri pepper powder and ginger. Toss marinade with diced chicken and refrigerate for a minimum of 2 hours.
  2. Preheat grill to medium high heat. Skewer chicken and grill for 4-5 minutes per side or until thoroughly cooked. Remove from the skewers and keep warm until ready to serve.
  3. While chicken is cooking, toss together tomatoes, cucumbers, onions and parsley in a large bowl. Keep refrigerated until ready to serve.
  4. While chicken is cooking, whisk together yogurt, sour cream, dill, salt and pepper until smooth. Keep refrigerated until ready to serve.
  5. To serve, warm pita light on the grill and open the pocket. Fill with chicken, toppings and sauce. Sprinkle with feta cheese.

Tips: All of the components in this recipe can be made ahead of time and stored until ready to eat. The topping can hold for about 3 days, sauce for about a week and chicken either cooked or marinated for 4 days. This recipe makes for a great take to work lunch.
