Root Vegetable Mash with Vegan Garlic Butter

A tasty vegan side dish with root vegetables that are perfectly mashed and seasoned with mega garlicky vegan butter.

Serves 4

Ingredients for root vegetable mash:

Instructions:

  1. Bring a large pot of water to a boil and add parsnips, potatoes and turnips. Boil for 15-20 minutes or until all vegetables are fall-apart tender.
  2. Drain vegetables and carefully spoon into a food processor. Add vegetable broth, salt and pepper and blend until smooth. Transfer to a bowl for serving.
  3. Combine vegan garlic butter ingredients in a food processor and blend until smooth.
  4. Serve root vegetable mash warm with vegan butter.

Tips: The vegan garlic butter is the perfect complement to a variety of dishes—try it with other vegetables or toast!
