Simply stunning heart healthy salad with no cooking required! Beets are incredibly delicious raw or cooked. These finely shaved beets add a nice sweet crunch to compliment the tangy blood oranges.

- In a large bowl whisk together lemon juice, zest, yogurt, mayonnaise, capers, garlic and chives until blended. Keep refrigerated until ready to serve.
- Toss orange segments, beets and arugula in a large bowl. Drizzle with dressing and hazelnuts before serving.
Tips: If you don’t have a mandolin you can shave beets using a vegetable peeler.
