Hasselback Hash
Sweet potatoes get the breakfast treatment, topped with egg, pepper, onion, and garlic—a healthy, hearty way to start the day.
Ingredients
Instructions:
- Preheat oven to 425°F.
 - Make a series of ⅛-inch slices along each potato, slicing only partially through.
 - Spread onion, peppers, and garlic on the bottom of a large cast iron skillet. Nest sliced sweet potatoes into the vegetable mixture. Drizzle with oil, and season with paprika and salt.
 - Roast for 50 minutes or until potatoes are tender and crisp.
 - Top potatoes with vegetable mixture, sunny side up eggs, parsley and scallions before serving.
