Alt Grain Tabbouleh with Turkey Kofta (Middle Eastern Meatballs)

Kofta is a traditional Middle Eastern style grilled meatball, this healthier version is made with ground turkey mixed with exotic herbs and spices. The meatballs are served on top of a farro tabbouleh salad loaded with parsley, mint, scallions and tomatoes-super tasty and refreshingly light.

Serves 4

Ingredients for tabbouleh:

Ingredients for turkey kofta:

Instructions:

  1. In a large bowl toss together tabbouleh ingredients until combined. Keep refrigerated until ready to serve.
  2. Preheat grill to medium high heat. In a large bowl mix together kofta ingredients until combined.
  3. Form torpedo shaped meatballs around bamboo skewers and grill for 10 minutes, turning frequently, or until slightly charred and cooked completely. Let rest for 3 minutes.
  4. Serve kofta on top of tabbouleh salad.
