Sweet potatoes get the breakfast treatment, topped with egg, pepper, onion, and garlic—a healthy, hearty way to start the day.

Ingredients

Instructions:

  1. Preheat oven to 425°F.
  2. Make a series of ⅛-inch slices along each potato, slicing only partially through.
  3. Spread onion, peppers, and garlic on the bottom of a large cast iron skillet. Nest sliced sweet potatoes into the vegetable mixture. Drizzle with oil, and season with paprika and salt.
  4. Roast for 50 minutes or until potatoes are tender and crisp.
  5. Top potatoes with vegetable mixture, sunny side up eggs, parsley and scallions before serving.
