Coconut Ginger Chia Seed Pudding Parfait

These colorful guilt-free breakfast parfaits are the perfect way to start your day. Easily make ahead for a meal on the go.

Ingredients

Instructions:

  1. Whisk chia seeds, coconut milk, vanilla, maple syrup, and ginger in a medium-sized bowl. Cover, and refrigerate for 2–3 hours or until set.
  2. Using glass jars, layer fruit and chia pudding until full. Garnish with toasted coconut and mint.

Tip: The chia seed pudding can be made in advance and lasts for about 3–4 days. You can customize your fruit layers with any of your favorites.
