Mashed chickpeas are a wonderful substitute for the classic potatoes. This recipe pairs this mash with a flavorful wild mushroom gravy-which has been simmered with red wine, vegetable broth, thyme and rosemary.

Ingredients for wild gravy:
- Combine olive oil, chickpeas, garlic, vegetable broth, salt and pepper in a medium pot and bring to a simmer over medium high heat. Simmer for 5 minutes and remove from the heat.
- Carefully pour the hot chickpeas and liquid into a food processor and blend until smooth. Stir in sour cream before serving.
- Heat olive oil in a large skillet over medium high heat and saute onions and mushrooms until tender. Deglaze pan with wine and stir in vegetable broth. Thicken sauce with cornstarch and season with salt, thyme and rosemary. Serve mashed chickpeas topped with mushroom gravy.
